Coconut Madras Curry Soup Recipe

Hello blog readers! I made the simplest, most wonderful soup yesterday. It has to be the easiest soup I’ve ever made. It has a creamy texture, almost like a bisque. If you really want to impress your friends & family, try it! It takes 10 minutes to make. And, you can have it on a Daniel fast, so I want to share it. I call it Coconut Madras Curry Soup.

Here’s what you need:

  • 1 (13.5oz) can coconut milk (regular or lite)
  • 2 cups unsweetened almond milk (regular or vanilla) (I used vanilla)
  • 1 12.5oz jar of Madras Curry
  • 1/2 cup mushrooms (I used oriental, but portabella or any will work)
  • 1/2 cup raw spinach
  • sea salt

**You can find Madras Curry on the aisle where Asian and Indian foods are sold. Specialty stores like Publix and Whole Foods are your best bet. I got it from Rouses. If you’re doing the Daniel fast recipe, choose one without sugar. I used the sauce by Maya Kaimal pictured below.

***I used dried oriental mushrooms (bought from Rouses). If you use dried mushrooms (any kind), you’ll need to let them sit in hot (not boiling) water for 20 minutes before adding them to the soup.

STEPS:

Combine coconut milk, almond milk, and Madras Curry in pot over medium high heat.
Add spinach and mushrooms after soup warms
Add sea salt to taste (you won’t need much salt because the curry has good flavor)

You can eat the soup by itself, or over whole grain brown rice. Or with boiled red potatoes!

I post these recipes for those doing the Daniel fast — but mainly for those who are afraid to give fasting a try. Fear of not knowing what we’re able to eat can cause us to avoid fasting. If your goal is to grow deeper in relationship with God, fasting is a way that can help you. And there are foods and meals that taste great that you are allowed to have. Read up on spiritual fasting before you start a fast. Prepare your meals, or have a list of recipes ready for each day before you start. That might help you. And, don’t harm your body by not taking in any nutrients. He’s a good Father, and will never require you to starve yourself in a harmful way to be closer to Him.

I found a very cool app that reads the bible to you. It’s great to listen to after you read a passage to really meditate on it. I play it in the car too. It’s the Redemption app. There are lots of Redemption Church apps. The one I use is pictured below:

Just click on the Bible tab. It pulls up passages for each day, or you can choose which chapters you want to read or listen to.
