Pesto Pasta Daniel Fast Recipe

Hello blog readers! If you’re one of the people who decided to start 2016 with a spiritual fast, you might like this article.

Tonight for dinner, I made a dish that turned out to be really good (8-year-old picky eater approved!) … and I want to share it with you. If you’re doing a Daniel fast, you might like it. I call it pesto pasta! ..and it’s easy to make.

Ingredients:

  • whole wheat pasta
  • 2 avocados
  • 1 cup coconut milk
  • 6-8 leaves of fresh basil
  • chopped or minced garlic
  • 1/2 cup any nut seeds (pumkpin, sunflower, pine, etc)
  • juice from 1/2 lime
  • 1 tbs olive oil
  • sea salt
  • black pepper
  • {fresh cilantro optional}

You’ll need a blender {and a food processor is optional}

Steps:
Boil whole wheat pasta until tender. Drain. Set aside until sauce is ready.

Sauce:
Put basil, 2 tbs minced garlic, olive oil, 1/2 seeds, 1/2 tsp sea salt {handful of cilantro optional} into food processor until finely chopped.  This is your pesto.

Scoop out the insides of your avocado and put in blender. Add coconut milk. Add the pesto that you made. Add lime juice. Blend until creamy. Add salt and pepper to taste.

(If you don’t have a food processor, just put all ingredients in the blender!)

Add sauce to drained noodles. Warm over medium heat until it’s as warm as you like.

{optional: Garnish with nut seeds, fresh herbs}

PS – I found a very cool app that reads the bible to you. It’s great to listen to after you read a passage to really meditate on it. I play it in the car too. It’s the Redemption app. There are lots of Redemption Church apps. The one I use is pictured below:
